Description

Needs little introduction, save to say that the true crab is highly variable, grows almost anywhere, and can bear astonishing amounts of blossom and yellow to reddish flushed fruit in a good year. The flavour of a true wild crab can be anywhere between astringently tart, to surprisingly edible, for that is the nature of seedling apples. Periodically, however a gem arises that is worth saving. Crab apple jelly recipes abound in cookbooks and the internet.
