Description

First recorded in 1665, this is the best of the culinary types, and assumed to have come from Cadillac in the Gironde. Very large round green fruit require cooking slowly for a long time, producing a pale pink puree with a lovely flavour. Very striking in blossom, it was once planted simply for its value as an ornamental tree. It is quite a vigorous variety, so allow plenty of space. Not chalk tolerant, but is otherwise suited to the north of the country.
