Description
Listed in Perfects of Pontefract's catalogue of 1769, this is old Yorkshire variety was prized for it's tart flavour and ability to cut the fattiness of a roast goose at Christmas time. The tree is compact and hardy, and bears large regular crops of fruit which cook to a very richly flavoured pale green puree.
"Included in the catalogue of William Perfect of Pontefract in 1769, as both its names suggest, this was the apple of choice to accompany the Christmas Goose; 'greening' is synonymous with 'souring' and is descriptive of its intensely tart flavour. Although not an immediately appealing description to modern ears, it does cook to a dense, pretty pale green purée that is sharp but richly fruity when amended by some sugar. Hogg recommended it for cultivation in exposed sites in northern England and as far north as northern Scotland; it is a very hardy apple although a relatively small tree.
